Elimination diet recipes - Curried millet

Curried millet (3-4 servings)

1 cup millet

2 cups water

1/2 teaspoon salt

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, chopped into small cubes

3 medium stalks celery, chopped

1/2 teaspoon ground cumin (or ¼ cup fresh cilantro)

1 teaspoon turmeric


Rinse millet in a pot, add water and salt, heat to boiling. Reduce to simmer, cover and allow to steam until cooked, about 15 minutes (stick a fork to the bottom, moving millet aside to see if all the water is gone).

Heat olive oil in a skillet over medium-high heat; cook and stir onion and garlic in the hot oil until onion is lightly browned, 3 to 5 minutes. Add carrot, celery and spices, sautee for another 5 to 7 minutes. Pour spiced vegetables into pot with cooked millet and stir to distribute evenly. Viola.
