Millet "granola" (4 servings)

Here’s a dish great snack or breakfast dish, for example with rice milk.


1 cup dried millet

2 cups water

½ teaspoon salt

¼ cup flaked coconut

½ teaspoon vanilla extract

3 tablespoons maple syrup

½ cup sliced dates


Rinse and drain the dried millet. Combine millet and water in a pot, cook on high until water boils, then turn down to low and steam, adding water until necessary, until the grain is light and fluffy and falls apart when you stir. Remove from heat and stir in salt, coconut, maple syrup, and vanilla. Spread hot mixture over oiled cookie sheet to approximately ¼ inch thickness and bake at 200°C (400°F) for about 30 minutes, or until top is lightly toasted. Remove from oven, use spatula to scrape off tray and/or peel aluminum foil off from the bottom. Break into bite-sized pieces. Mix in sliced dates and store in sealed container.
